Palak Paneer- Festival of lights


Just love picking up the Metro in our area as it has daily recipes.  In this weekend's Metro paper was the recipe to celebrate the Festival of Lights that originated in India.  The recipe for Palak Paneer was a quick version as food always places a big part in any celebration!

The recipe is easy and quick!
Saute Chopped garlic and onion until onion is translucent.. Yes, my chopping can use work!  

 Add spices. Then stir in the Pureed Spinach and yogurt, cook covered for 10 minutes, then add the Paneer.. Cook Covered for 5 minutes or until the Paneer softens and is cooked.




Serve with Naan bread or with Basmati rice


Recipe for Palak paneer

1 T oil
1 medium onion
3 garlic cloves
1 tsp gr coriander
1/2 tsp chili powder
1/2 tsp gr cumin
 package of spinach
1/2 cup of yogurt
12 oz Paneer


The mixture was very bland and lacked flavor..

I would add more garlic, more spices, along with gram masala also the mixture needed some heat, like chillies.. It also need more yogurt!
